Our standard gujia is made healthier with Baked Karanji. You can just bake this snack in the oven rather than deep-frying it. It’s a simple dish that takes only a few minutes to prepare, and because it keeps well, you can store it and serve it with tea.

- One tsp powdered cinnamon
- One cup of sugar
- Half a teaspoon of nutmeg
- One tablespoon of cashews, chopped
- Two tablespoons of ghee
- Half a cup of khoya
- Three tablespoons of semolina
- One tablespoon of finely chopped almonds
- One tablespoon of raisins, chopped
- Regarding Dough:
- Three cups of all-purpose flour
- Five tablespoons of ghee
- Half a cup of semolina
- One pinch of saffron
- 150 ml of milk for the main dish
Method for Baking Karanji
Step 1: Preheat the oven to 180 degrees. In a sizable basin, sieve semolina and all-purpose flour. Pour in the ghee and use 120 ml of milk to mix into a stiff dough.
Step 2: Heat two tablespoons of ghee in a nonstick pan to create the stuffing. Saute the raisins, cashews, and almonds for five minutes, or until they turn brown.
Step 3: Add the green moong dal (powdered in a mixer after soaking for an overnight), stir, and sauté for ten minutes. Add the sugar, sooji, khoya, nutmeg, and cardamom powder. Stir thoroughly and cook for ten minutes. Take off the heat, pour into a bowl, and leave to cool for a while.
Step 4: Cut the dough into equal pieces and shape them into tiny rounds. To make little puris, roll out. Place a tiny amount of the prepared stuffing in the middle. Brush the edges with a little milk and place in a gujiya maker. Make the final karanjis in the same manner.
Step 5: Lightly brush a baking tray with ghee, then dust it with all-purpose flour and arrange the karanjis on it. After giving them a quick ghee wash, bake them for thirty minutes in a preheated oven. After fifteen minutes, turn the side.
Step 6: In a small nonstick pan, heat 3 tablespoons milk. Bring it to a boil and add the saffron. Take off the heat.
Step 7: Just after removing from the oven, brush the karanjis with saffron milk and bake for an additional fifteen minutes. You are now prepared to serve your delectable karanjis. Have fun!
